Strawberry Balsamic Salmon

This recipe is one of my favorite recipes, so it’s only fitting that it makes the list of one of the very first recipes to hit my blog. It’s well rounded, healthy, yummy, and gets full family approval. Maybe the best part though: it takes less than 30 minutes to complete.
I honestly don’t know where I got the recipe for this. I know it must have originated in the depths of internet food blogs, but somewhere along the line I lost the link and despite my best efforts, I can never seem to find the exact recipe that I used. Part of me (a large part) is beginning to wonder if it ever existed in the first place because it seems like I should be able to find it, right? I mean, google rarely fails me – especially when I’m googling something very specific. I’ve found Raspberry Balsamic Salmon recipes that semi-match what I remember or imagined the original recipe to look like and have started to think maybe that’s what spurred this magic and I got the berries confused. If that’s the case, it works out okay because while raspberries are delicious and I’m sure would make a wonderful sauce here, they are also much more expensive than strawberries and I’m all about saving a couple dollars when I can – especially if I’m not sacrificing quality.

I love all the ingredients in this dish. Strawberries for their tart-sweetness and the honey and balsamic combination that really makes them sing. I’m a sucker for balsamic vinegar and I’m sure you’ll realize this the more recipes of mine that your read/pin/create and I love the rich flakiness of a properly cooked salmon.
Roasted Broccoli
Aaaaand let’s talk about roasted broccoli for just a minute. Have you ever had roasted broccoli? Warning: you may never want to consume broccoli prepared another way ever again. Roasting it brings out such a delicious flavor that is hard to describe but will forever change the way you think of broccoli. It doesn’t caramelize quite like roasted carrots do, but the effect is similar. And delicious. Aaaaand I’ll never eat steamed broccoli again. Or any vegetable steamed probably. Roasting most vegetables has ruined me to most other preparations.
This dish is easy to scale up or down depending on your family needs and reheats well for lunch the next day. As an added bonus, you can bake or pan fry the salmon, though I usually opt for pan frying because we like a crispy skin. Here, I’ve served it over cous cous (super easy and discreet to use whole wheat!) but I also very regularly use Rice Pilaf.

More good news about this dish: both of my kids Eat. It. Up. All parts of it. I always feel like I’m winning big time when my son empties his entire plate before I even notice he’s started eating – and that is what usually happens here. He’ll even let me put the sauce on top and he is usually pretty adamant about having no sauce, almost ever. The baby gobbles it right up as well. And my husband likes it. This is one of the most frequently eaten meals around our house – second only to Spaghetti. Here’s the kid’s plate version:
If anyone ever asks me for a dinner recommendation, this is what I tell them to make. It’ll be great to finally have it on the internet so I can just send them to a link! haha. But really, if you are struggling to complete your menu this week and want a fast, healthy option this is it. You will love all aspects of it – and so will the rest of your family.

Strawberry Balsamic Salmon
Quick, delicious, colorful, and healthy meal everyone will love!

Ingredients

  • 1 pint Strawberries, diced
  • 1/2 cup honey
  • 1/2 cup balsamic vinegar
  • 1/2 cup water
  • 1-1 1/2 lb salmon
  • 1 head of broccoli

Instructions

  • Preheat the oven to 400 degrees.
  • Chop the broccoli, put on a baking sheet, mix in some olive oil, salt and pepper. Bake for 15 minutes.
  • Put half the strawberries, honey, balsamic and water into a small saucepan. Bring to a boil then slow to a simmer and let thicken and reduce for about 10 minutes.
  • Cut the salmon into individual filets and salt and pepper. If baking, put into preheated oven for 12-15 minutes. If pan frying, put a tbsp olive oil in a warmed pan. Add the salmon and cook for 3-5 minutes per side or until cooked through.
  • Serve over rice or cous cous and enjoy!
